Hello, Dear Ones!
I grew up in the south and we ate 'all things fried'! Yumminess.
This is a wonderful little treat my Mother used to fry up for us
and I've tweaked it a bit as the years go by.
Fried Salmon Patties
1 (14 3/4 ounce) can pink salmon
1/2 cup cornmeal
2 eggs
2 tablespoons finely chopped onions
2 tablespoons diced green pepper
1 teaspoon seasoning salt
1/2 teaspoon lemon pepper
1/2 teaspoon garlic powder
2 tablespoons parsley, chopped (optional)
Directions:
Open and drain the can of salmon. Clean by removing the skin and bones.
In a medium bowl, add salmon, the rest of the ingredients and mix well.
Shape into balls and press down to make the patties.
In a large fry pan and on med-high, heat 3 tablespoons oil. Place patties in hot oil and brown the patties on each side, about 3 minutes per side.
Place the browned patties on a doubled paper towel on a platter or plate.

Oh Shelia I have such wonderful memories involving salmon patties! My Gran made them for New Years to go along with the peas, greens and cracklin bread! There would be ambrosia and red velvet cake too. Gran and Mama both made good ones! Once when Gran was staying with us, we had some unexpected company show up at lunch time. There were 5 extra mouths to feed! Mama entertained the company while I was helping Gran in the kitchen and I asked what we were going to do becuase there was now 5 extra mouths to feed. She said don't worry I know how to stretch this can of salmon. And she did! It was one of the best meals that she ever prepared for us! I will have to remind Mama of this, she will appreciate the reminder of that day.
ReplyDeleteI have never used lemon pepper or bell pepper, but I can see where they would be good. I will have to make these this weekend now! Along with some fresh biscuits and some cane syrup! Yours look so good! Thank you for the memory jogger, I had not thought about that in years! Once again you made me smile!!!

Mom made salmon patties and loaf many times. I do now, I love them! I was trying to think of something different for protein, and I totally forgot about these! I'm on my way for salmon, and I have all the ingredients already to try your recipe. Will let you know what I think! Thanks!
ReplyDeleteWe too had salmon patties when I was growing up and I make them occasionally. Good Eats actually had a recipe for tuna patties and they weren't bad. Yours look delicious.

ReplyDeleteOh Shelia, I just started making these again. I had forgot all about them. My mother used to make these all the time. She was born and raised in Virginia and I was born there also, so it was a staple for us.
My son called one night and he asked what I was doing and I told him making dinner and he said what are you making mom? I told him about the Salmon cakes, so he wanted to know how to make them. He loves Salmon and goes salmon fishing all the time. I am going to try your recipe as it sounds really good. I had a couple left over and ended up dividing up one patty for my doggies and they LOVED IT.

ReplyDeleteI make these too, Sheila. Did you know that if you leave the bones in (they're soft), you get a big calcium boost?

ReplyDeleteIt's a funny thing....I don't like salmon, BUT I love my older sister's salmon patties. I noticed last week at Cracker Barrel Restaurant that they have salmon patties on the menu.

ReplyDeleteSouthern staple, for sure. I leave the bones in and smash them with a fork before adding the other ingredients. I don't eat them with syrup, but my hubby does. I now live near Seattle and my friends think canned salmon is an abomination. I think the same about smoked salmon... no thanks.

Oh, I love salmon patties. I had never heard of them until I lived next door to an old Jewish woman who used to make them with potato pancakes and applesauce and bring me over a plate of them. To this day we call them "Millie's salmon patties" and I miss her dearly. We use breadcrumbs but I'd like to try your method with cornmeal. I also leave the skin in and crumble up the bones and eat them for the extra calcium. xo

ReplyDeletePS. I found I couldn't get the product you use to clean my Pyrex, but yours were so clean,It got me moving to make mine look fresh too. I tried a few things but finally used a little borax (environmentally friendly too) I just mixed it with a little water to make a paste and gently rubbed and it worked. They shine now thanks to your inspiration. :)

Shelia, You brought back a memory of my mom making salmon patties for us. I make them too but not not for a long time. I will try your recipe because Bill likes them. Especially if I make a white sauce to go with them. YUM!

Really -- can ANYTHING be bad if it's fried?! These look so yummy -- I will add these to my recipe list for sure. Hubby loves anything salmon so I'm sure these will be a hit.

ReplyDeletemy mama made salmon patties (she called them croquetts (don't know how to spell it..) and I loved them sooo much. Very thin, fried crisp...oh, I loved them. I have tried several times to make them using her recipe but the minute I open the can of salmon, I get sick. Just can't take the smell. I am not a fish person at all......darn it !!
Your salmon patties look yummy! Salmon patties, fried taters and sliced tomatoes is my hubby's favorite meal--think I'll fix that for him this week.

You know you just rang a bell for this southern gal! This was a favorite breakfast growing up, salmon cakes, fried green tomatoes, and hot buttermilk biscuits! Yum, yum, yum!!! I'll have to make some soon. Thanks for reminding me of very happy times.
