Okay, enough of that! I wanted to join our Dear Michael Lee at Designs by Gollum for Foodie Friday!
Herb Crusted Pork Tenderloin
1 (4 lb) boneless pork loin, with fat left on
1 tbs. salt
2 tbs. olive oil
4 garlic cloves, minced
1 tsp. dried thyme
1 tsp dried basil
1 tsp dried rosemary
Preheat oven to 475'. Place loin on rack in roasting pan. combine the remaining ingredients in small bowl. With your fingers massage mixture onto loin, covering all the meat and fat.
Roast for 30 minutes, then reduce heat to 425' and roast for an additional hour. Allow to sit for 20 minutes before carving. It will continue to cook while it rests.

Oh my that looks good, AND simple enough for even me! We had pork tenderloin stuffed with spinach and red pepper the other night -- it was good, but Howard was late getting home from work so it got a tad overdone. My fault, not his!

ReplyDeleteWe love pork loin too. I love this recipe and it is much like the way I cook it. I will try your recipe as soon as I get to the store and buy one.
We are busy getting ready to take our RV to Maine for a month. We leave in 10 days. Fun alone with my hubs. A rare occasion so far this year. Smile.
