Fiesta Corn Tortilla Quiche

Fiesta Corn Tortilla Quiche.
Trust me, this was so delicious.
The crust is made with corn tortillas...easy peasy.
We loved this and I think you will too.
The only thing I changed in the recipe was I swapped the cottage cheese (I don't like cottage cheese)
and used ricotta cheese instead.
Poked on a few jalapenos and sliced tomatoes and it was a home run!

Fiesta Corn Tortilla Quiche

1 lb. hot ground pork sausage
5-6-inch corn tortillas
4-oz. can chopped green chiles, drained
1 c. shredded Cheddar cheese
1 c. shredded Monterey Jack cheese
6 eggs, beaten
1/2 c. whipping cream
1/2 c. small-curd cottage cheese (I used ricotta instead)



Brown sausage in a skillet over medium heat; drain. Meanwhile, arrange tortillas in a lightly greased 9" pie plate, overlapping on the bottom and extending 1/2 inch over the edge of plate. Spoon sausage, chiles and cheeses into tortilla-lined pie plate. In a bowl, beat together remaining ingredients. Pour egg mixture over sausage mixture. Bake, uncovered, at 375 degrees for 45 minutes, or until golden. Cut into wedges to serve. Serves 4.

    This corn tortilla quiche looks so yummy. Quiches are one of my favorites. I noticed your red tea pot and smiled. I used to have red in my kitchen, and I really miss it. I recently changed it to turquoise, but I think I will always be a RED girl.
