Corn Chowder

Hello, Dear Ones. For me and Mr. Precious it's always perfect weather for a little bowl of soup and especially now that it's officially Fall.


I've made a big pot of corn chowder. Just hits the spot for the cooler evening weather.


Now I haven't typed in a recipe, so forgive me.

Just start by making your favorite potato soup. After I have boiled my little potato pieces I love to smush them up so my soup is more creamy.

I make a cream sauce: Melt butter in a sauce pan and gradually add about a couple Tbs of flour. The slowing stir in about a cup and a half of milk and stir until all the lumps are gone. Add salt and pepper to taste.


I stir til it thickens and then add this to my potatoes.If the soup is too watery you can put a little of your hot soup in a cup with a little corn starch and whisk away. Add this to your soup and stir. You've just made some cream of potato soup.

To make this lovely soup into corn chowder: just add corn, canned or frozen. I like to use the white shoe peg corn as it's not so sweet. I don't like the sweet taste in my soup. Then I add some chopped onions and some very thin slices of little baby carrots. Let it all simmer till onions and carrots are done to your liking.

Sprinkle with a little shredded cheese and poke a slice of cornbread on the side and you're good to go! Yummy!

    "Mr. Ed" had been begging for some homemade Creamy Potato Soup all week. I made some yesterday! Next time, I'll try your "recipe"! My MoMa always used white shoepeg corn, too! Thanks for sharing this recipe.
