Foodie Friday

Hello, Dear Ones and welcome to Foodie Friday hosted by our Dear Michael Lee at Designs by Gollum. Pop on in to see her and you'll see lots of delicious foods and can get a few new recipes.

I'd like to share with you today one of our favorite dishes - Taco Salad. After all, we don't cook very fancy here at Note Songs. :) This is a really simple dish, but it will make your tiny tummy very happy!


I don't use a recipe so you can adjust accordingly to your family.

Chop enough lettuce for each serving. Or if your lazy you can buy the shredded lettuce at the grocery store and just open the bag. :)

Chop enough tomatoes and onions for each serving.

We like guacamole on ours so take the goody out of the avocado. Cut into the avocado and run your knife around the entire thing. It should pop open and then just remove the goody. Mush all of the goody up with a fork, adding salt, pepper, garlic powder, diced onions and a smidge of picante sauce. Continue to mush up all the ingredients and then add some lemon or lime juice so it will keep its pretty greenness.

Set this all aside and fry up your hamburger meat ~ adding salt and pepper to taste. Pour off the excess grease and add some onions and cilantro.

Put some fritos on your plates, then the lettuce, the hamburger meat and tomatoes. Add the guacamole to the top and some sour cream if you like, then top off with shredded cheese.
We use Catalina dressing as our dressing.

That's it and it's very yummy!

  12. YUM-----MEEEEE!! Any type of Mexican food just floats my boat!!
    I'm a hardcore chips and salsa gal, too!!

    We have a weird taco salad recipe that is hubby's all time fave, so no changes can be made!! I'll have to just enjoy yours with my eyes!!

  13. Your taco salad looks just as good as the one I made last night. Instead of Fritos I used the Cheez-It Duoz (zesty + cheddar). Pretty tasty!! We like to add in olives and carrots sometimes too.

  30. Hello Sheila, I make taco salad very much like you. I use kidney beans, otherwise it is the same. I put dry taco seasoning in the hamburger. I love guacamole but I have never made it. I can do what you did. Why did I think it was so hard??? We use the same dressing too. I LOVE IT. Thanks for sharing your recipe (so to speak) HA!

  34. Rooks Maaaaaaveelous Sheila!! That is one of my favorites when I am not on a diet...which is all the time! I just have to know...enquiring minds NEED to know....do you play all of the Note Songs you leave us with here on your piano??? How long have you been playing the piano?   36. Hi Shelia, I just saw your note at the back porch. I went immediately and deleted that account and all other yahoo accounts and started another. I hope that helps some. I had changed my password several times, since Wednesday night, to no avail. I have a new yahoo account, but won't put it on the blog.

    Thanks for letting me know. I did not get one of those, again. I had one the other day, in another e-mail account, it was from myself to myself, because the other e-mail was in the yahoo addy book. Crazy!!!

  42. A recipe based on fritos! My daughter will love it, minus all the veggies of course. I chopped up zuchinni really small into the pasta sauce tonight. She still managed to eat around it.

  46. I always have loved taco anything!! Nowadays I have to use beans instead of the meat and no cheese! BUT it still tastes great. I love the backgound material you used in the photo shot!

    I came to visit and let you know how I added my name to each picture when I post. I use Windows Live Writer - I downloaded it for free and after dragging a picture to the posting area - I add a watermark - which is my name - you can choose the size and font and which corner to put it in...I can't remember who's blog did a tutorial on Live Writer - It may have been Susan -Naps on the porch....anyway I love Live Writer to post to my blog....

    Oh how yummy. I love salads like this. Once I'm off my little special diet I will definately give this a try...only because my present way of eating isn't allowing me to eat certain foods including avacado so I'll just hold on.
