Foodie Friday and Dishaholic Award! WooHooness!

Now my friend, Dear Gollum, has started making our Fridays - fabulous! Fridays are now all about food! So go to see her blog and you'll lots more peeps Foodie Fridaying - you're gonna love it!


Today I'm gonna share with you some Mexican food - beef enchiladas. Here are most of the ingredients.

Fry up the hamburger meat, add a little salt and pepper. I also add some picante sauce, just whatever hits my fancy! :) Stir it all up! Then I take a couple tortillas at a time (we like the whole wheat) and soften them up a bit in the microwave. They're easier to roll that way. Spray your baking dish with Pam and start to build your enchilada! Spread the meat down the length of your tortilla, sprinkle onions and a tad of cheese and start rolling the little puppy up! Place in your your pan, folded side down. Continue til all your meat is almost gone. I have seven here and had a little bit of meat left over so I just sprinkled it across the tops of the rolled enchiladas. Next I sprinkled some chopped green chilies and lots of cheese. Yummmy. We love our cheese.

Now poke this little pan in a preheated 350' oven for about 20 minutes.

While the enchiladas are heating up it's time to make the guacamole! I've used three fairly large avocados, peeled and sliced. Then I take a fork and smush and smash 'em to death! I add very finely chopped onion, use however much you like, salt and pepper, a little picante sauce and then I squeeze the juice from a half of a lime. I'm saying half because I used a little bitty key lime. Yes, I can actually taste the difference. I wouldn't put the juice from a regular sized lime in this - you'd be sorry if you did! :)
Now we love to have a little extra cheese sauce to pour atop our enchies! I use a can of green chili enchilada sauce and then chunks of Velveeta cheese. I melt it very slowly and on a low heat so it won't burn. I also add some picante sauce. Again, just use what tastes good to you! I love my picante sauce!! :)
Out come the hot enchiladas! See how pretty they are with the melted cheese on top! Yum!
This is my tiny plate! To me one enchilada is enough - they're quite filling. With a little guacamole, refried beans and a little bit of salad with pico de gallo on the side, I'm ready to eat!

Oh, we must not forget about a little desert!
This is for Mr. Precious! He gets two little short cakes with sliced strawberries and blackberries and dollups of whipped cream on top! He can have two because he just ran five miles! That boy!

Do you see this wonderful award? Oh, my goodness! I'm so excited! This beauty was made and presented to me by my sweet friend, Melissa . Oh what a sweetie she is. How special I feel and look at her beautiful dishes.

I'm so blessed and truly appreciate this. I am a Dishaholic and I've confessed this to you a few times. But I'm in good company...many of you are Dishaholics too and there is help - just play with your dishes till the cows come home! I really don't want to grow up, do you? :)

think I had ever heard the word until she showed her tablescape. She has dishes I covet! :)
2. Gollum, actually Michael Lee at Designs by Gollum - this lady has the most beautiful dishes
and knows how to display them. She even cooks and puts food in hers! :)
3. Debbie at Confessions of a Plate Addict - sweet Debbie is a marvel at tablescaping and she
has the most charming assistants. I know she couldn't do this without them! :)
5. Laurie at Bargain Hunting with Laurie - this gal has such a touch and she has so many
dishes - she can just do anything with them!
6. Fifi at Fifi Flowers - now this lady is an artist and she has become our virtual Dishaholic!
So when she sets her virtual table - you'll for sure want to come.

3. Well, I do love all my dishes so it's hard to say which set I love the best. It would be a toss up
between my Blue Willow by Johnson Brothers or Blue Garland by Haviland.

4. I have always love the Old Country Roses patterned dishes by Royal Albert.

5. This is another hard one. I guess my silverware - it's all very old and has been handed down
to me by a family member. I do cherish it!
